If you’re fed up with the stereotype of the raging, screaming chef, it will be a pleasure to watch him through the glasses of his open-view kitchen window. Here it’s all nice and quiet, and the work flows smoothly. This peace is a key feature both of his character as a man and of his cooking style: classic in its substance, but declined in the name of a sober, low-key modernity, pleasant and never too confusing. In a word: reassuring.
