Denis Lovatel is an undisputed genius of pizza. He created an unconventional dough: light, crunchy, far from both the Neapolitan and the Roman style. He paved the way for others. The good news is he won’t stop: now he’s choosing to pursue those values he already shared with Slow Food: get rid of the waste; only buy from animal-friendly farms; manufacture with a certified production chain; choose suppliers that use sustainable fishing methods; make seasonal and biodiverse pizzas; support local economy.
