This is just the predessert of Le Calandre’s tasting menu, usually a minor step, a brief introduction to the sweet ending of the meal. But not here: here everything has a solid quality, in thought and in action. Miraculously skilled craftsman, this chef goes with an earthly flow, practicing with pop creations like the fried Neapolitan pizza dedicated to famous pizza chef Alfonso Mattozzi and masterpieces of Italian strength such as the Bone marrow with herbs.
