Here the motto is «less is more», and the food follows the same philosophy: essential, never trivial, faithful to its raw materials, all strictly found in small farms, local or national. The fish only comes from Sardinia or from Chioggia’s marked. In Matteo’s hand we can find French and Eastern influences, in a mix that combines a classical nature and a general pleasantness, with scents and acidity from the Asian East. Lots of technique are hidden behind the casual simplicity of the dishes, very polished in their plating. The dining service is discreet, but very mindful and observant.
