Sometimes new restaurants take a while to get started. We went to Impronta, in Bassano del Grappa, ten days after its opening. And we found a menu that was already well-structured and executed, complete and convincing. Maybe it’s because it had a long gestation period: about two years. Impronta is the blissful result of the partnership between chef Carraro and Laura Avogadri, who’s in charge of the dining hall and the wine cellar. They made some wise choices, starting with the location, right next to the Ponte degli Alpini. Everything was perfect: a dinner to remember for the fitting blend of class and taste, complex and appetizing, harmony and immediacy.
