Restaurant Sottovoce is directed by young Stefano Mattara: he prepares balanced dishes, with the right dose of courage in presenting elements with contrasting flavours. Mattara appreciates acidity and bitterness, as proven by his Risotto with Parmigiano and coffee powder, and the Sarde in saor with ash-baked onion.
