Thanks to its hard work, Consorzio has reached its tenth anniversary. The history of the so called “New Italian Trattoria” should start from this restaurant owned by Andrea Gherra and Pietro Vergano. The two men rode the euphoria of the post-Olympic Torino so they could change some of the rules of the most Italian restaurant format of all.
In this establishment the two patrons and chef Miro, as well as their various “boys” have given themselves one task above all: point the spotlight on farmers and producers. This is how noble raw materials arrive here, to which the chef will add a delicate technique aimed to improve the ingredient, but only if necessary.
