He pays strong attention to high quality seafood, which comes from local fishermen, choosing the best even among poorer kinds of fish, which he transforms with respect and creativity.

Claroni has conquered his clientele with a well-recognisable cuisine, cosy and increasingly refined. He adds nice and distant influences and original intuitions to seafood tradition.
