The restaurant is called Memorie and it was opened by the famous and talented Felice Lo Basso, who despite having settled in Milan cannot forget his Apulian origins. Hence the name of the restaurant, which hints at the traditional culinary culture, adapted to meet current taste, and enhanced by modern techniques.
There’s a long series of great ideas and wise interpretations, including Risotto alla parmigiana, Mackerel with wafer, white wine sauce and beetroot cooked in salt. And an evergreen: Spaghettoni with roasted tomatoes, ricotta salata and cream of basil.
