Aurelio Damiani’s is a historic name in Marche’s fine dining landscape. He was one of the first chefs to believe in a regeneration of local cooking, with lighter cooking techniques and bold contrasts. Now his style is based on absolute simplicity and respect for the products. Every morning he goes to the market, picks the fish he likes and visits his suppliers’ farms to put on the plate the best possible flavors. You can see it in the raw fish, gently marinated or enriched with aromatic herbes, like the scallop with flowers’ salt. His risotto is always amazing.
