In the dining hall, Mario welcomes his guests with the modesty of someone whose skills as a sommelier and connoisseur are unquestionable; in the kitchen, Serena has proved her worth through her understanding of the raw material, dealing first-hand with the farmers. The Millefoglie with steamed Arcevia rabbit and crispy lentils, Verdicchio jelly and celeriac is a must.
