Francesco Brutto is a modus vivendi, therefore he’s the result of all his interactions, first of all the one with his friend and sommelier Regis Ramon Freitas. Provided that both of them have a privileged knowledge of worldly things – herbs and their use in the kitchen for the first; wine and Dionysian pleasures for the second – the surprising fact is their relationship of mutual interpretation and care. Among the dishes: Onion pie with raw beef, dog rose and blood pudding or the iconic and heretic Tortellini with fermented tamarind, double cream and Angostura.
