Alessio Longhini is a pretty young face in the culinary scene, but he’s been working for years at Stube Gourmet, the culinary restaurant within the Hotel Europa. He choose not to aim at a philological recovery of the local gastronomic heritage (as his «neighbor» Dal Degan), but to trace his own path, «45% in the territory, 55% in the outer space». Experiences, inclinations and a fair amount of chance brought him to develop a strong cuisine, with a good technique and a reliable taste, very enjoyable and free from any flourish: «I don’t like bitterness or acidity, I prefer some sweeter notes. And I love the world of vegetables!»
