Juri Chiotti was 25 years old when he conquered the first Michelin star. That was not his road however: his steps had a different direction, bound to the mountains of Valle Varaita where he was born. Here, in 2016, he opened Reis: a nicely renovated farm, with a vegetable garden and orchard, and place for the animals.
Juri here gives an interpretation of almost forgotten Occitan traditions, and serves a new interpretation of mountain food. Eighty per cent of the menu changes every week, but some dishes preserve their place in the menu: like the ravioles, gnocchi with an oblong shape, served with (lots of) butter and black pepper.
