Alessandro Salvatico’s menu (Armani di Dubai)

The next edition of Expo, scheduled in 2020, will be held in Dubai. Therefore, in a virtual passing of the baton the very last chef at work during the six months of Identità Expo will be from Dubai, though he’s truly Italian. He will participate in the “Italian & International Best Chefs” series with the best chefs from the world cooking at Identità Expo, from Wednesday till Sunday (in this case till Saturday), both at lunchtime and in the evening.

His name is Alessandro Salvatico, from Armani/Ristorante, the gourmet establishment inside the extremely luxurious five star hotel opened by the designer in this city in the United Arab Emirates. He’s been working there since its opening, contributing with his decennial experience, acquired in important restaurants all around the world. He started his career with catering school in Pinerolo (Torino).

Then came a long partnership with Davide Bisetto, with whom he collaborated – with an essential role – in the opening of Casadelmar, a restaurant later awarded with two Michelin stars, inside luxurious hotel Porto Vecchio in Corsica. He had already worked with Bisetto at restaurant Carpaccio in Paris, one Michelin star; and with Stefano Marconi at La Dolce Vita, in Oyonnax, France.

Salvatico also participated in Food Francia in Tokyo, at Alain Ducasse’s restaurant Beige, and at Plaza Athénée, in Paris, also owned by the great French chef.
