In design, one speaks of planning to create artefacts that have communication value. This concept fits perfectly for Gian Pietro and Giorgio Damini: the two brothers, in their boutique in Arzignano, continually plan and communicate edible objects, gastronomic syntheses of what's best available, expressions of something good that is also healthy. In this project, family values converge, experiences flow into a singular gastronomic objective: the research of total quality.
Meeting them in person in their little world means experiencing something that's completely different from the typical village shop, a total sensual experience, glorified by a brilliant availability of the service and by a cuisine that always expresses itself with modern and elegant effectiveness. Their concept of quality starts from the choice of meats: the Limousine breed rules the roost, that of a «world-beater» – as they call him -, the breeder Alfredo Parmeggiano from La Fattoria farm in Bettola di Pozzo d’Adda, in the province of Milan, who guarantees a complete control of the supply-chain, developed in complete safety, something that's evermore necessary in order to have a healthy and perfect meat. Gian Pietro, born in 1973, works following the butcher-dna inherited by his father: he personally takes care of each phase of the pre-slaughtering and of the post-hanging of the sides of the beef. All this, having only one objective in mind: guaranteeing a higher quality meat to the client. Moreover, he's responsible for the selection of the cheese and for the most precious cured meats and the most exciting “akin” products, behind the counter. Giorgio, 4 years his junior, cut his teeth in the kitchens of Tacchella, Santini and Perbellini. This experience today guides him in his kitchen techniques which are now perfectly expressed following the principles of simplicity and essentiality. A style who led them to get a Michelin star on November 2014. The first time in history for an Italia butcher shop.
