Antonio Scalera, chef at restaurant La Bul in Bari, is today’s protagonist at “Contemporary Italian Chefs”, with the best Italian chefs cooking at Identità Expo.
Born in Bari in 1974, he acquired remarkable experience in Italy and abroad. For instance in Madrid (at Viridiana and Cuenllas), still influencing some of his dishes such as gazpacho. Before and after that: Paolo Teverini (Bagno di Romagna), Trattoria Toscana de l'Andana (Castiglione della Pescaia), Quinzi e Gabrieli and Al Presidente (Roma), Grotta Palazzese (Polignano).
After the opening of Ducasse’s restaurant in Tuscany, he decided to go back home, following one certainty: that land has everything that’s necessary to prepare good cuisine, as proven by the success of La Bul, where his partner Francesca Mosele takes care of dining room and cellar.
Fine dining at Expo 2015 goes under the brand of Identità Golose thanks to Identità Expo, the event – created in collaboration with S. Pellegrino – which for six months will summon great Italian and international chefs to Milan for a unique, extremely elegant temporary restaurant. There will also be lessons, cooking shows, meetings, demonstrations... All this animating a rich programme of events (soon online), the result of the organisational effort and prestige of Identità Golose.
