Two branches in Milan – the first in Porta Romana, the second in Buenos Aires – for Marghe, an establishment that offers an excellent take on “contemporary” Neapolitan pizza. It was born in 2016 when a group of Milanese entrepreneurs and young and talented pizzaiolo Matteo Mevio joined forcesThe latter had arrived from Valtellina to work at Gino Sorbillo’s Lievito Madre al Duomo but passed away in a tragic motorbike accident on November that same year.

The current team of pizzaioli continues his work. Team is a very important concept at Marghe, so their four pizzaioli are all young or very young and share a great passion for pizza (and for tattoos too, by the looks of their arms).

The “eldest” is Riccardo Raia, born in 1987 in Milan. When he was in his twenties, he spent many years in London where he started to work as a waiter in a Neapolitan pizzeria. That’s when his passion for pizza and for cooking started. «After many years spent in London, what with pizzerias, kitchens and dining rooms, I decided to return to Milan where I was lucky enough to start to work for Marghe and so I have the opportunity to learn and perfect my skills every day», he says.

The other three are all born in 1995 and all come from the south. Michele Botta is from Naples and has had a finger in the pie since he was 14, when he first worked with his father, a pizzaiolo, and later in other pizzerias in town. In 2016 he left Naples to join Marghe, summoned by Matteo Mevio himself. «Thanks to his trust, my first experience away from home began. It allowed me to grow very much. To this day, I’m in this great family, and I keep on improving and learning».

That same year Simone Mantuano and Marco Scovino joined the team: they were both born in Cosenza and that’s where they started their career as pizzaioli, the former in 2014 and the latter in 2013, before arriving in Milan where they enlarged the Marghe "family".
