After Massimo Bottura and Ugo Alciati, Marco Stabile, of restaurant Ora d'Aria in Florence, is the protagonist of the “Italian & International Best Chefs” week at Identità Expo.
Stabile, born in 1973 in Pontedera has been working in Tuscany’s capital for months now: currently in Via dei Georgofili, that is to say in the heart of town, and earlier in Via Ghibellina, next to Murate, Florence’s old prison. Hence the name, which he kept after changing location. His passion for cooking began as a child when he spent lots of time in the kitchen with his mother Enrica, an excellent cook. Then came catering school in Florence, Club Bell’Arturo with Guido Sabatini, the jobs in San Miniato and Prato, Salotto del Chianti in Mercatale Val di Pesa, the prestigious Osteria di Passignano and the internship with brothers Trovato at Arnolfo…
With his cuisine he aims at returning to his origins and to local ingredients, while using modern techniques.
Fine dining at Expo 2015 goes under the brand of Identità Golose thanks to Identità Expo, the event – created in collaboration with S. Pellegrino – which for six months will summon great Italian and international chefs to Milan for a unique, extremely elegant temporary restaurant. There will also be lessons, cooking shows, meetings, demonstrations... All this animating a rich programme of events (soon online), the result of the organisational effort and prestige of Identità Golose.
