Born in 1971 in the province of Pordenone, he attends the local catering school in Aviano. After finishing school, Nicola Dell’Agnolo starts to train in the dining room, in Italy and abroad.
He does seasonal work in Switzerland, followed by experiences in Venice, France, Milan, Siena and London. In each workplace, he strengthens the foundations that now make him a talent in hospitality management. Turning him into one of the most prominent figures in the field.
In 2005 Dell'Agnolo gets a call from Stefania Moroni, the daughter of Aimo and Nadia. It’s a crucial year for the development of one of the most historic establishments in Italian fine dining: Alessandro Negrini and Fabio Pisani arrive in Via Montecuccoli, the future chefs of Il Luogo di Aimo e Nadia, arrive at the same time.
14 years later, Nicola Dell'Agnolo is the impeccable restaurant manager and maître of Il Luogo. He’s convinced that a close-knit team is the key to a successful dining room service.
With the maître, he must act as a coach: «I like using the metaphor of team sports, because there’s a similar mixture in the dining room. You need a collaborative spirit, which you must build and train each day. The person responsible for guiding a team must be capable of understanding his team members, each one with their gifts and talents, and each one deserving to be put in the condition to do their best».
