Cuisine as responsible for common wellbeing, as a source of inspiration, as a symbol of an evolving society. From whom can we expect the next phase of development if not from young people? In times like these my generation needs to come to terms with a near future that doesn’t give away great certainties.

Other moments in history teach us that difficult periods were ended thanks to the tenacity and commitment of those who believed in an ideal, in a dream. Mine is that of writing a future. It is necessary to start right away, with courage, without letting the fear of failure become a sharp weapon, capable of cutting our will. While we look forward, we must not forget the essential lesson of the past.

In a globalised world, where multinationals standardise our lives, I choose to return to the simple, genuine things, unique in their kind. Small farmers and breeders, my grandfather’s farm, the raw materials of my territory: these are all elements that could be lost and forgotten. They are rich in values and feelings. This is all that we need today: the return to what used to be is the road to reset today and start again towards a florid and satisfying future.

What you do today can improve all your tomorrows: this is the motto and the thought that guides me every day and gives me the strength to face difficulties. I look ahead, today, I look at my present inside a future perspective. I spend my days sowing, deeply convinced that soon all this rain will bring abundance and gratification.

Allow me to say one more thing. The experiences abroad have significantly marked my culinary choices, but it would all have been in vain if in my DNA there wasn’t a propensity to commitment. I’ve taken this road thanks to my father, Mariano who, since I was a child, has proved to me the meaning of total dedication to a cause. Lulled among the pots and raised in the home kitchen, I keep my origins enclosed in my heart, aware that without them, I could not write my future. The secret is believing in this today.
