Every week “Italian & International Best Chefs” presents a special event: the chef livening up the kitchen of Identità Expo from Wednesday till Sunday will play in a duet with a foreign chef, creating a truly unique meeting of different styles. Marco Stabile, of restaurant Ora d'Aria in Florence and this week’s protagonist within the “Italian & International Best Chefs” format at Identità Expo, will thus sign today’s a special lunch menu with German chef Oliver Glowig, of the homonymous restaurant inside hotel Aldrovandi Villa Borghese in Rome.


After Massimo Bottura and Ugo Alciati, Marco Stabile, of restaurant Ora d'Aria in Florence, is the protagonist of the “Italian & International Best Chefs” week at Identità Expo.

Stabile, born in 1973 in Pontedera has been working in Tuscany’s capital for months now: currently in Via dei Georgofili, that is to say in the heart of town, and earlier in Via Ghibellina, next to Murate, Florence’s old prison. Hence the name, which he kept after changing location. His passion for cooking began as a child when he spent lots of time in the kitchen with his mother Enrica, an excellent cook. Then came catering school in Florence, Club Bell’Arturo with Guido Sabatini, the jobs in San Miniato and Prato, Salotto del Chianti in Mercatale Val di Pesa, the prestigious Osteria di Passignano and the internship with brothers Trovato at Arnolfo…

With his cuisine he aims at returning to his origins and to local ingredients, while using modern techniques.

As for Glowig, he had already conquered two stars with his previous job at Olivo, inside Hotel Capri Palace, in the previous decade. He also had a brief experience in Tuscany, at Poggio Antico in Montalcino, in the winter of 2010-11.
