Pumpkin cream, hazelnut and paccheri Under the tree: winter venison and hare Bocadillo helado amour Ravioli flavoured with lavender, nutmeg and almond Celeriac cooked in salt crust Risotto with Annurca apples and powdered Pantelleria capers Pepper skin ravioli with tuna and green olives Sweet rice sauté

The four seasons Sallad of old cabbage, roasted bone marrow and raw heart, toasts and salt Nutmeg Pannacotta, Salad of Clementine’s, Marmalade ice cream Linguine with the fifth quarter of squid Seitan bread, veal tongue, hazelnuts and capers Forest floor Coal flamed tartar of roe deer served with it´s own heart. Accidulated cream flavoured with smoked eel finished with bleak roe from the lake Mälaren and melted animal fat. Elements: earth, oil, safffron and chocolate
