Anthony Genovese, of restaurant Il Pagliaccio in Rome is the protagonist of this week’s “Italian & International Best Chefs” series with the best chefs cooking at Identità Expo from Wednesday till Sunday at lunchtime and in the evening.
The son of two migrants – his parents are from Calabria but he was born in France – he developed an eclectic cooking, thanks to his personal experience in contact with different influences, starting from that of his wife Marion Lichtle, a pastry chef from Alsace, thus in an area bordering with two European cultures. Genovese also travelled at length, always acquiring experience: Japan, Thailand, Malaysia, China, before arriving in Italy at Rossellini’s in Ravello. Therefore today, at his restaurant Il Pagliaccio, in the alleys of Rome, a short walk from Campo de' Fiori, he moves much beyond local tradition. He gives a very strong personal touch to all his preparations: the energy is that of a rebel (after all he was born in 1968…), softened today by a professional maturity that makes his dishes more intelligible, without losing any rigour or coherence.
Fine dining at Expo 2015 goes under the brand of Identità Golose thanks to Identità Expo, the event – created in collaboration with S. Pellegrino – which for six months will summon great Italian and international chefs to Milan for a unique, extremely elegant temporary restaurant. There will also be lessons, cooking shows, meetings, demonstrations... All this animating a rich programme of events (soon online), the result of the organisational effort and prestige of Identità Golose.
