Leemann e Moriarty's menu

A special event at Identità Expo S.Pellegrino. On Monday 15th and Tuesday 16th there will be an unprecedented duet with Italian-Swiss Pietro Leemann and Mark Moriarty, winner of the S.Pellegrino Young Chef 2015, as we said here. He will include a vegetarian dish in Leemann’s menu, who has always dedicated himself to what he calls “natural fine dining".

Leemann needs no presentation: the chef opened his Joia in 1989 in an area in Milan where kebab shops and Ethiopian restaurants were growing in number, presenting an unprecedented “natural fine dining” offer, which was a way of not using the words “vegetarian cuisine”, which used (or still do) to scare most people. His choice turned out to be a winning one (Joia was the first place in its kind to win a star, in 1996).

As for Moriarty, of the Culinary Counter in Dublin, he won the S.Pellegrino Young Chef thanks to a dish that conquered the jury: Celeriac baked in barley and fermented hay, cured and smoked celeriac, a celeriac-based recipe with simple ingredients, with a strong Irish identity and connection to tradition.
