Paco Morales
Paco Morales was the great revelation of Spanish cuisine more than 15 years ago: after attending the hotel management school and Guggenheim in Bilbao, Andoni nurtured his talent in green Errenteria, making him the fish chef from 2002 to 2004. Then a short period at elBulli, then again Mugaritz, then at Madrid Hotel Hospes’ and later at Ferrero, a Hotel in Bocairent.
In 2016 he opened the most important chapter of his book, Noor, in his hometown Cordoba, Andalusia. This special restaurant expresses an unprecedented gastronomic experience: a reformulation of the Andalusian past that doesn’t pretend to be faithful to the origin, but rather proposes a new universe, a culinary tale that sinks its roots in the historical legacy, but doesn’t set limits. Noor focuses into techniques, flavors and ways of doing things from another time, it breathes new life into them, makes them travel through unprecedented paths and imagines non-existent but possible pasts. Together with Paola Gualandi, they’ve been working so well that they gained 3 Michelin stars in November 2023 and so many other important awards.
And the present and future of Paco Morales are much more than Noor. In Cordoba he has consolidated his freshest and most relaxed restaurant: El Bar de Paco Morales, which has its replica in one of the most elegant and cosmopolitan areas of Athens, at One&Only Aesthesis hotel. In February 2024, he launched another important adventure: Qabu restaurant, at the One&Only Za’aabel hotel in Dubai.
