Fabrizio Mantovani, chef of the restaurant Fm in Faenza, is today’s guest star of Identità di Pasta, the event organized every Friday by Identità Expo with the contribution of Pastificio Felicetti during which a professional of the restaurant industry (one for each region, this time it’s the turn of Emilia Romagna) tests himself with the most popular among Italian products.
 
Mantovani was born on January 27, 1968 in Lugo. Son of fruit sellers he has always given great importance to the choice of fresh products: «I develop my ideas in the markets». He loves a cuisine that is a “blending of goads». He explains: «Food has always meant a lot of things to me. Images, faces, sounds, colors, art, design. Shape has always followed taste».
