Jonathan Benno is responsible for the huge success gained in such a short time by the "new modern Italian" restaurant Lincoln, opened in September 2010 at the Lincoln Center. As he himself has often said, this opening is a dream come true for Benno, long-standing chef of the restaurant Per Se.
Meticulous by nature, maniacal in the search for the perfect ingredient, the chef learned his trade at the Culinary Institute of America of Hyde Park in New York, and this was soon followed by an important experience at the Mayflower Inn, where the chef/mentor John Farnsworth encouraged him to understand that you never stop learning in this profession. This is something Benno never forgot during his subsequent experience at Michael Mina’s Aqua and, later, at the Californian French Laundry in Napa Valley, where he first met his guru Thomas Keller. It was from Keller that the youngster learned the meaning of the word “excellence”, fortified by subsequent experiences at Daniel in the Big Apple, at Auberge du Vieux Puits in France and back in New York at Les Célébrités in the Essex House first and then at Tom Colicchio’s Gramercy Tavern. In 2004 came the fundamental transfer to Per Sé, once again by the side of Keller, for the opening and beginnings of the restaurant. As the restaurant’s sous chef, Benno became increasingly famous and this fame was magnified by media awards: 4 stars from the New York Times and, in 2006, 3 Michelin stars. Having reached the heights, the next move was the recent opening of the Lincoln, which is already among the restaurants most closely monitored by Manhattan’s critics and public.
