Terra Madre-Salone del Gusto 2020: 4 dinners, starting with the one dedicated to Vittorio Fusari

The theme of the 2020 edition of Terra Madre – Salone del Gusto should have been ecosystems. Then, as we all know, Covid-19 arrived and changed everyone’s plans.

This is why Slow Food’s most important event this year will have a different shape and will take place mostly through online events which will allow everyone to be in contact (at least virtually) with some of the best producers scattered around the world and to participate in conferences and tastings (you can find all the info here terramadresalonedelgusto.com).

Food, however, is first of all a matter of sharing and conviviality. Hence within the programme that will liven up the first days of the event in Torino, there will be 4 dinners that will help reflect on the different ecosystems of our country, and on the peculiarities that every area can offer.

We start on Wednesday 7th October with a dinner dedicated to Vittorio Fusari, chef from Franciacorta and very close to Slow Food who passed away early this year. Some of the cooks who have worked with him in over 40 years of career will remember him, together with a great friend, Peppino Tinari from Villa Maiella (Guardiagrele) and a young promise of the restaurant scene of Lombardy, Greta Gemmi (Al Resù, Lozio), the latest among Vittorio’s pupils. The menu will include some of Fusari’s greatest dishes – Potato and caviar sfogliatina, cream of chestnuts and bay leaf oil, Eel between vegetable garden and vineyard – together with recipes by Tinari and Gemmi, prepared together with the chef from Iseo.

The following night it will be the turn of Beppe Rambaldi (Cucina Rambaldi, Villar Dora) and Antonio Buono (Casa Buono, Ventimiglia) who, in this four-handed dinner, will present their valleys (Susa and Roja) in a dinner that will have Piedmont speak with Liguria.

On Sunday 11th of October, instead, the topic will be osterias and cities, featuring the cuisine of Bolognese Trattoria di Via Serra and Milanese Ratanà. We will taste classics from both traditions, but we will also discuss, while enjoying the food, about raw materials and the relationship with the countryside. To end this rich programme, on Monday 12th, a four-handed event dedicated to the sea: the Tyrrhenian and Adriatic seas will be featured in this final dinner. Two great representative of our seafood cuisine will interpret the fish from these seas: Al Metrò from San Salvo Marina (Abruzzo) and La Pineta from Marina di Bibbona (Toscana).
