, who sent him to Plaza Athénée in Paris for a festival attended by talented young chefs, he immediately proved himself to be creative and disciplined. Since 2003 he has been at the helm of Grenouillère in Montreuil Sur Mer, in Northern France, a restaurant which earned a Michelin star just 4 years after opening. Gauthier has cooked in Japan, at Beige for Ducasse, in Beijing, Canada, Sydney and London during Identità London 2010. In Montreuil, the town where he was born, he also opened Froggy’s, a bistro specialised in spit-roast meat, opening another restaurant in Calais: Le Channel. He describes his cooking as “wild, brutal and radical”. In 2012 this approach earned him the title of "One to Watch", the restaurant owner to keep an eye on in the World's Fifty Best
