After moving to Milan and Taormina, the chef returns and is in charge of the two restaurants of the new The Corner boutique hotel, located in a villa from the early 20th century in the Aventino neighbourhood

Fabio Baldassarre is back in Rome. After having left both the restaurant in Milan, Unico, and that in Taormina, Opson, he has moved on back to his origins and starting a new adventure inside an ambitious project. This happens inside the new The Corner Hotel, in the Aventino neighbourhood in Rome.

This new hotel is located inside a beautiful Liberty-style villa, from the early 20th century, entirely renovated by Danilo Maglio, who in this case is both the architect and the entrepreneur. Renovations, which lasted around two years, allowed giving back to the city a true jewel that had remained abandoned for over ten years, through devastations and squatting. A beautiful example of private entrepreneurship that returns to the city a splendid corner that was once decaying and is now new, so it can create jobs and profit. These days, something quite rare.

Today The Corner celebrates a wide-ranging hospitality offer; with over 2000 square metres available, there’s space for an hotel, a restaurant, a bistro facing the street and called in fact Bistreet, a lounge garden, a club and an emporium. In the mosaic shaping The Corner, there will also be art, through film festivals, book presentations, live music and deejay sets, cooking shows, with specially created spaces.

This ambitious project has Fabio Baldassarre as the absolute protagonist in the kitchen of both restaurants. The main one is characterised by a soft elegance, with comfortable powder and ash-coloured leather armchairs, Chester sofas, a roof that can be completely opened and a vertical garden. An old, renovated carpenter table, lacquered and made “precious” with an induction hob where to finish the dishes in the dining room welcomes the guests of the restaurant where one can enjoy dishes such as Spaghetti “ajo ojo e peperoncino" on a red prawn carpaccio with lime or Fried rice with burrata, cherry tomatoes and powdered capers.

Among the main courses, instead, one can taste the Braised tuna cheek with soy and lime, regina bean salad and horseradish sauce or the classic Chicken cacciatora with potatoes and peppers. Of course the menu also include some vegetarian dishes in order to make everyone happy.

The offer at Bistreet is completely different. Here street food, both national and international, is the protagonist, for instance with cornets and meatballs (made with boiled meat, chicken curry, salted codfish, and the aubergine vegetarian one), the gnocchi of the day, pici with cheese and pepper, the classic burger, also available in the fish burger and vegetarian version. The menu is completed by tartare and meat and fish carpaccios and four salads.

The Corner is a very interesting and dynamic project, which has all it takes to establish itself, where chef Fabio Baldassarre will have all the tools and the opportunities to express his cuisine in the best possible way.
