11.25 The real ceremony begins. Do mentions the myths and legends around the Red Guide’s inspectors: "The only thing that’s true is that inspectors are strictly anonymous. They don’t do so to catch the cook’s mistakes, but to be able to work serenely. They are Michelin employees like me, but while I’m just very passionate about food, they are very competent".
11.16 Time for the institutional introduction on Emilia Romagna, with the regional assessor of Tourism and Trade Andrea Corsini. In the audience, people are waiting for the new stars. Cheers from the Catering School students, sitting at the back. Norbert Niederkofler addresses them: "Work hard, guys. Our job is beautiful".
Massimo Bottura on Instagram: "Massimiliano Alajmo and I: constancy, year after year, 3 Michelin stars"
10.55 The chefs arrive at the Auditorium Paganini, designed by Renzo Piano. In the audience, there’s Massimo Bottura, Bobo and Rossella Cerea, Giancarlo Perbellini and his second Giacomo Sacchetto, Riccardo Monco and Annie Féolde, Andrea Ribaldone, Enrico Crippa, Enrico Bartolini, Norbert Niederkofler.
10.50 Everything’s ready for the presentation of the 64th edition of the 2019 Guida Michelin Italia, the third in a row in Parma. A few numbers: in 2018 there were starred 356 restaurants: 9 with 3 stars, 41 with 2 and 306 with one. Is the total number going to increase this year? Are we going to have a 10th restaurant with 3 stars? For now, there’s only one information available on the 2019 Guide: there are 21 new Bib Gourmands in 2019, a total of 257 restaurants.
