Born in Campania in 1984, he’s the sommelier at Il Pagliaccioin Rome. Here, as of October 2016, he’s also the restaurant manager. 

He was born in a small village in the province of Salerno and acquired the first experiences in the restaurant industry from an early age, starting from small dining rooms. He attended catering school, which led him to Cortina, to Hotel Bellevue when he was only 14. 

From that moment on, his future was set. A long road, full of pleasant bends, that made him travel across Italy and Europe. England, Sicily, Tuscany, and then the Amalfi Coast and the prestigious Rossellinis restaurant inside Hotel Palazzo Sasso, where following the example and the lessons of Daniele Di Palma, he starts his career as sommelier. In November 2010 he arrives to Rome, and became responsible for the wines at Anthony Genovese’s Il Pagliaccio.

Over the years he’s received many awards, confirming his natural talent for hospitality: in 2014 he’s the Best Sommelier in Italy according to Gambero Rosso, that same year his wine list gets the Best Wine List for Italian Bubbles award from L’Espresso. The same guide nominates him Best Sommelier in Italy in 2017. 

He’s also one of the founders of Noidisala, the association of which he’s the secretary- general. For Zappile hospitality is a vocation: «Every night we take the field – he says – to do our best, to do whatever we can to give our guests a unique experience, trying to understand each one’s desires, so as to anticipate their needs. Today we take part in a great journey, a positive memory that (thanks to us too) will last forever».
