Our homage to all chefs
In the film narrating Identità 2015 an applause dedicated to those who work between dining room and kitchen
Next Wednesday, on March 18th, the film celebrating the edition number 11 of Identità Golose in Milan will be online. It will be focused on the edition that has just ended, celebrated like the six previous ones in the congress centre in Via Gattamelata. It was created and filmed by Francesca Brambilla, Serena Serrani and Federico Cicogna. The former two have been the official photographers of Identità for years now, while Federico collaborates with them in the production of videos.
We decided to extrapolate half a minute of applauses, a long applause in the Auditorium hall which all of us, working in the congress, would like to dedicate to all those who every day step into a kitchen, wear a uniform and work

very hard to present us with some good mouthfuls. Cooks, chefs and patron-chefs, sous chef, executive, commis, kitchen hands (essential, if they don’t work at full speed everything stops and then you’re in big trouble), and then those who represent the link with the dining room, starting from runners to real waiters, sommeliers and maitres (when present), those who work at the cash register and those who look after the cloakroom taking care of your coat.
This is an applause to everyone, good and bad looking, short and tall, with lots of hair or none, those talented and less so, those young and old, passing on traditions and curious about innovations. All this while the Black keys play Howlin‘ for you in the background.
